Sweet Potato Bites & Zucchini Noodle Breakfast Bowl
These 2 amazing recipes are great to make in advance for yummie, nutritious on-the-go meals!!!
This recipe (2 sweet potatoes) makes about 4 servings. I doubled it so that I would have leftovers for the week! It's a great healthy side to any lunch or dinner & can also be used in the Zucchini Noodle Breakfast Bowl! Just make extra, place in an air-tight container & refridgerate until redy for use!
I used salt, pepper, garlic powder, paprika & rosemary... But you can experiment with any spices you like!
The Zucchini Noodle Breakfast Bowl is another new favorite of mine! However I realized the first time I made it that it was a bit time consuming! My advice is that if you want to use these as a quick on-the-go breakfast or brunch, make sure to prep everything in advance!!!
The Avocado Dressing can easily be made in advance & was the most time consuming part. Make the Sweet Potatoe Bites in advance as per the recipe above. You can also "poach" the eggs in advance & refridgerate (or cook fresh the day of)... & to make things even quicker... You can spiralize the zucchini before hand & then pan-fry when ready to use!
*You can also put everything into meal-sized containers & microwave without cooking the zucchini first!!!
